Long story short, the DNA of birds still contains the building blocks of Dinosaurs, so by activating old DNA instructions and blocking some of the newer ones, they can reverse millennia of evolution.
Which is pretty cool!

Oh, great. Next they'll be breeding them for meat. And they'll get out. And start breeding in the wild and become an invasive species.

An interesting point that he raised in the radio interview was that this is gene manipulation in the exact same way that breeding a Chihuahua or a Boxer is. Its just more efficient!
